She chose this recipe for her wedding cake.<\/p>\n<p>1 1\/4 cups vegetable oil<br \/>\n3 eggs, beaten with mixer<br \/>\n1 3\/4 cups granulated sugar<br \/>\n1 teaspoon vanilla extract<br \/>\n2 1\/4 cups all-purpose flour<br \/>\n1 1\/2 teaspoons cinnamon<br \/>\n1 teaspoon baking soda<br \/>\n8 ounces crushed pineapple, with juice<br \/>\n1 1\/2 cups chopped bananas<br \/>\n1 cup chopped apples<br \/>\n3\/4 cup coconut<br \/>\n3\/4 cup chopped nuts<\/p>\n<p>Heat oven to 350 degrees F. Grease and flour the bottom of a 9 x 13-inch pan.<\/p>\n<p>Mix together the oil, eggs, sugar and vanilla extract. Sift the dry ingredients; add to mixture. Add remaining ingredients. Bake for 48 minutes.<\/p>\n<p>Cool, then frost with Cream Cheese Frosting:<\/p>\n<p align=\"left\"><span style=\"font-family: Arial; font-size: small;\">1 stick unsalted butter, room temperature<\/span><\/p>\n<p><span style=\"font-family: Arial; font-size: small;\">3 ounces cream cheese, room temperature <\/span><\/p>\n<p align=\"left\"><span style=\"font-family: Arial; font-size: small;\">2-3 cups confectioners sugar, depending on how sweet you like it<br \/>\n<\/span><\/p>\n<p align=\"left\"><span style=\"font-family: Arial; font-size: small;\">1 teaspoon vanilla<\/span><\/p>\n<p align=\"left\"><span style=\"font-family: Arial; font-size: small;\">\u00a0<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp; I adore this recipe, and so did Princess Diana.
